This is the perfect homemade tabouli recipe for summertime

This healthy Middle Eastern dish is perfect this season for any day of the week.

Now that summer has officially kicked off (the solstice was just last week), and long, warm nights are here, many of us are in the mood for lighter, healthier fare. This deliciously easy recipe requires minimum cooking while offering maximum nutritional qualities and taste in return: its healthy nutrients such as weight-reducing copper and its light-but-satisfying exotic flavors will make this your summer go-to.

Fresh seasonal tabouli

Serves: 4 (side dish)

Preparation time: 20 minutes

Cooking time: 30 minutes

Difficulty: easy

Ingredients:

⅓ cup of millet, cooked al dente
2 large tomatoes, finely chopped
¼ cup of lemon juice
4 cups of chopped fresh flat-leaf parsley leaves (see note)
1 cup of chopped fresh mint leaves (see note)
4 green onions, thinly sliced
3 tbsp of coriander chopped
¼ cup of olive oil
1 tsp of grounded cumin seeds
1 tsp of grounded coriander seeds

Method:

1. Put the lightly cooked millet, tomatoes and the lemon juice in a bowl. Set to the side, covered, for approx 30 minutes until the millet has softened.

2. Add in the remaining ingredients to millet mixture. Combine together gently. Serve.
